Morning Maple Muesli

INGREDIENTS
1/2 cup puffed quinoa
2/3 cup GF Oats
1/2 cup pistachios
1/3 cup coconut flakes
1/3 cup goji berries
1/2 cup chopped apricots
1/2 tsp sea salt
1/2 tsp cinnamon
1/2 tsp mixed spice
2 T maple syrup
1/2 cup coconut oil
INSTRUCTIONS
Preheat your oven to 160°.
Line a tray with baking paper and set it aside.
Mix your dry ingredients in a bowl except for the goji berries.
Melt the coconut oil and mix through the maple syrup.
Mix through the dry ingredients with a wooden spoon and transfer the mixture onto the tray.
Bake for 20 minutes occasionally stirring to break into clumps/make sure it all gets toasted.
Leave on the bench until completely cool and mix through the goji berries.
Store in an airtight container for up to a week or in the fridge for up to two weeks.
