Morning Maple Muesli

Perfect to start the day or to have as a snack! This was made using the oats from GF Oats which are uncontaminated oats from gluten, wheat, soy, dairy etc! Use code BRITTANY10 https://www.shop.gfoats.com.au/discount/BRITTANY10 to try them out for yourself!


INGREDIENTS

  • 1/2 cup puffed quinoa

  • 2/3 cup GF Oats

  • 1/2 cup pistachios

  • 1/3 cup coconut flakes

  • 1/3 cup goji berries

  • 1/2 cup chopped apricots

  • 1/2 tsp sea salt

  • 1/2 tsp cinnamon

  • 1/2 tsp mixed spice

  • 2 T maple syrup

  • 1/2 cup coconut oil


INSTRUCTIONS

  • Preheat your oven to 160°.

  • Line a tray with baking paper and set it aside.

  • Mix your dry ingredients in a bowl except for the goji berries.

  • Melt the coconut oil and mix through the maple syrup.

  • Mix through the dry ingredients with a wooden spoon and transfer the mixture onto the tray.

  • Bake for 20 minutes occasionally stirring to break into clumps/make sure it all gets toasted.

  • Leave on the bench until completely cool and mix through the goji berries.

  • Store in an airtight container for up to a week or in the fridge for up to two weeks.
