ABC Muffins

ABC (muffins), easy as 123... My Mum always used to make these muffins for us when we were little. There are lots of variations but ours were always Apple Banana Chocolate chip. Perfect allergy-friendly snack for kids' lunchboxes and for sneaking a bit of fruit in! Using GF Oats steamed rolled oats to make this gluten-friendly. DRY INGREDIENTS
1/2 cup GF Oats rolled oats
1 and 1/4 cups of GF self-raising flour
2/3 cup coconut sugar
1/2 cup dark chocolate chips
1 tsp baking powder
1/2 tsp baking soda
1 tsp ground cinnamon
1/2 tsp mixed spices
Pinch of salt
WET INGREDIENTS
1 large grated apple
2 medium mashed bananas
1 tsp vanilla essence
1/2 cup almond milk (or any DF milk substitutes)
1/4 cup melted coconut oil
1 T Apple Cider Vinegar
TOPPING
1 T coconut sugar
1 T rolled oats
Optional dried banana chips
INSTRUCTIONS:
Preheat the oven to 175C.
Sift the flour, baking powder, baking soda, and spices into a bowl. Mix through the oats and dark choc chips.
In a separate bowl mix the wet ingredients together except the Apple Cider Vinegar.
Combine the wet and dry ingredients mixing until just combined. Add and mix through the ACV.
Place into muffin tins or moulds. They won't rise much so fill them up at least 2/3 of the way.
Mix the topping together and sprinkle on top of each muffin.
Bake for 25 minutes or until a skewer/knife comes out clean.
Once done leave to cool before removing from tray.
Store in an airtight container for 4 days or in the freezer until you want one.
