Ginger Muffins with Cream Cheese Frosting

Perfect combination of ginger with dairy free cream cheese for a delicious muffin combo. Using GF oats which were gifted for recipe development. Let me know if you try them out!


INGREDIENTS

  • 1 cup of gf oats

  • 1 and 1/2 cups gf flour

  • 1 tsp baking powder

  • 1 tsp baking soda

  • 1 tsp cinnamon

  • 1 tsp ginger

  • 1/2 tsp nutmeg

  • 250 ml dairy free milk

  • 60g melted Nuttelex

  • 3/4 cup golden syrup

FROSTING

  • 240g cream cheese

  • 1/2 cup melted vegan butter

  • 2-3 cups of powdered sugar

INSTRUCTIONS

  • Preheat the oven to 175 C.

  • Mix the dry ingredients and the wet ingredients separately.

  • Combine until just mixed (do not over mix).

  • Bake for 25 mins and leave to cool until.

  • Whilst cooling, mix the cream cheese frosting.

  • Ice the muffins and devour!
