Ginger Muffins with Cream Cheese Frosting
Perfect combination of ginger with dairy free cream cheese for a delicious muffin combo. Using GF oats which were gifted for recipe development. Let me know if you try them out!
INGREDIENTS
1 cup of gf oats
1 and 1/2 cups gf flour
1 tsp baking powder
1 tsp baking soda
1 tsp cinnamon
1 tsp ginger
1/2 tsp nutmeg
250 ml dairy free milk
60g melted Nuttelex
3/4 cup golden syrup
FROSTING
240g cream cheese
1/2 cup melted vegan butter
2-3 cups of powdered sugar
INSTRUCTIONS
Preheat the oven to 175 C.
Mix the dry ingredients and the wet ingredients separately.
Combine until just mixed (do not over mix).
Bake for 25 mins and leave to cool until.
Whilst cooling, mix the cream cheese frosting.
Ice the muffins and devour!
