Chocolate Peanut Butter Protein Fudge

Servings: 12 (dependent on size)


GF RSF VEGAN


From my dairy days I was definitely one to eat fudge even though it made me feel sick. This is my take on a chocolate peanut butter fudge but without all the sugar and dairy in it.


INGREDIENTS

-1 scoop protein powder

(I used Macro Mike Chocolate PB)

-1 cup of soaked dates

-1/2 cup of smooth peanut butter

-1 T sweetener

-2 T water

-1/4 cup melted coconut oil

-1 T cacao powder

-1/2 tsp Sea salt


Toppings: (optional)

-Smooth peanut butter

-Chopped peanuts

-Sea salt



 

INSTRUCTIONS:

-Boil the jug and pour hot water over the dates. Cover with a plate and leave for 15 minutes before draining to soften the dates.

-Add all of your ingredients to a food processor or a blender.

-Blend until smooth, adding more water if necessary to blend.

-Ideally you want the consistency to be fudgy and smooth.

-Line a tray with baking paper and pat the fudge into shape.

-Drizzle some more peanut butter, chopped peanuts and chunks of sea salt.

-Freeze for at least 2 hours or until firm to the touch.

-Cut into squares and store in the freezer.

-Best part is you can eat it straight out of the freezer!
